I would send a marketing packet:
- Intro letter with a special blurb about meeting him/her at the conference
- Service provided
- Types of cases on which you consult (that apply to the attorney's specialty area)
Be sure to state you will f/u with a phone call in X days (1 week to 10 days).
If one or more attorneys stand out; in other words, you marketed to them and they showed an extreme interest, I would go ahead and phone them personally and skip the packet. They will probably want one and you can tell them when you speak with them that you will send them one. Or, you can go ahead and have one in the mail to them when you phone them...

I would phone him and tell him that he won the drawing. Then, you can set up a time to come in for an interview.
Also, I have a list of all the attendee's of the conference. What should I do with it? Do I send them all a marketing packet, nice note? What would be best?
I had the same thing. Took me a while, but I sent marketing packets to all the attendees. You can include that special note about meeting them.
I should have told you before the conference to mentally jot down (and, later, on paper) special parts of your conversation with the attorney so you could recall later when you phone them/send a note. Sorry, but forgot that part.
Then there is the attorney that asked me to call him next week. Do I call him Monday or would that look too eager or even desperate for the case?
No, it will not look desperate. He invited you to call him. Monday is fine. It's strictly business. Shows that you follow up on things.
Since this was my first time exhibiting, I am at a total loss of what to do next.
You are doing fine. Go with your instincts, too. You are the one who actually met face-to-face with these future clients.
