Just wondering as well as support to vegetarian/vegans etc are we open to swapping recipes?

I prefer chips to french fries as thicker although I make my own and don't fry them but oven bake with a little coating of oil.

What a nice thread!

I've been a vegetarian for about six years now, never really liked meat but of course was always expected to eat it as a child. Was mostly veggie all through high school and college before going "all the way" and never will go back....I feel sooo much better (really think meat is impossible to digest and "heavy") and love ALL kinds of veggies! The only exception seems to be the one you can ALWAYS find in your hospital cafeteria: brussel sprouts

My other half and my kids eat about 50% veggie,and although I hold out vague hope that someday they'll join me, I know better than to push them...

My favorite cookbooks: Fields of Greens, The Mediterranean Vegan Kitchen and A Year in a Vegetarian Kitchen. I like Veganomicon too, and the postpunkitchen forums are great for recipes,too!

Here is a link to a blogsite that has some great recipes. I'm pretty sure this woman is working on a cookbook, and she was one of the recipe testers for Veganomicon. I've made several of her recipes, and they are wonderful!

Sounds like you have a relatively healthy diet. Good luck with going more veg when it feels right for you. Med-surg nursing is very stressful so it helps to be in good shape.



It is tough when there's a meateater in the house. My ex ate meat, but I did all the cooking and he eventually liked what I cooked. He never went veg, but he discovered he actually liked vegetarian food, especially veggie burgers.
Yes, I'm Puerto Rican. I cook lots of "arroz con gandules" and love plantains (green or ripe). I love to cook and it would be nice to cook for you all

Thanks. I know I feel much better on a vegetarian diet too. I agree that's it's not a good idea to be forceful about your diet. Hopefully they will come around.

Yes, by all means if you or anyone has any recipes to swap or some interesting websites, that's part of what this thread is for.

w00t...we should have a bit party one day with you doing the cooking! Never heard of plaintains until I moved to FL. This past march when I went to Miami, I had them several different ways, including the green ones mashed and fried.

I do the 'flexitarian' thing when I'm a guest in other people's homes, too. I'll load up on veggies and just a small bit of whatever animal protein is being served. At restaurants, if there's not a good veggie entree (dinner salads and pasta primavera gets old pretty quick!), I'll go with fish or seafood.


I tried the vegan route before, but on the tight budget I have and the lack of vegan choices in my area, it got prohibitive to the point I was eating raw foods only.

One of my fav recipes and also hubby likes is spinach and paneer (cheese) curry although you can use alternative with the spinach like torfu (that is what I did yesterday, used torfu). No real quantities as i just throw in stuff

Onion chopped
Paneer or Torfu
Spinach
fresh tomatoes
cumin, garlic, salt and chillies to taste (depends on how strong you like)

Gently brown paneer/torfu in a little olive oil and remove from pan. In same pan add the onion fry for a couple mins once soft add sliced tomatoes, cumin, garlic etc and after a couple minutes add spinach and cook through. Serve with rice

Hey All!
Great thread. I've only been a nurse for a few months, but I've been a vegan for the last 16 years. I can't imagine going back. I also want to recommend The New Farm Cookbook . Its an oldie but a goodie, and definitely has the best vegan mac & cheese I've found! Veganomicon is for sure my favorite recent cookbook however.

That sounds real good and easy to make. Do you use frozen spinach or fresh leaves?

Welcome to Allnurses. Nice to meet you. I'm sure you'll have plenty of input in this thread and the other nurses forums as time goes by. 16 years is a long time and I admire that commitment. What do you think of vegan cheeses on the market? I've found very few are good. There's a new vegan Rice one out, that I actually liked on veggie burgers, but I haven't been able to find it again.
