I'm having shrimp salad, marinated salad with cherry tomatoes and fresh mozzerella, and some rare roast beef. And of course, a margarita. And probably Tums.....

it's just me, my bf and our kitty here.

kitty had some tuna chunks and cat milk.

we had some seared scallops with bacon, grilled onions and peppers, farfalle pasta with a lemon garlic aioli, a caprese salad (fresh tomatoes, basil and mozzarella cheese with o&v and baby romaine), artichokes gratinata and some frozen drink concoction of blackberries, merlot and ice.

i love to cook... today's a good excuse for me to make tons of food and pig out. my boyfriend has learned that we italians don't mess around when it comes to dinner time. :)

allie, i've decided you need to stick around in my life for a few reasons.

one being, when my dtr gets married (which won't be for a few yrs), i want to hire you to cook/cater the wedding.

aww thanks! i love weddings! cooking is fun. i would have loved to go to culinary school but i'm too much of a slob. i was a cook when i was in paramedic school, tho.

the girls i work with will ask me for things all the time, i give them a grocery list, they bring what i ask to work, and then i bring them back their dish the next night. i've had a ton of free time on my hands since i've been out of nursing school and cooking makes me feel somewhat useful, since i can't find a 2nd job. i really enjoy doing it and i won't take money from my friends for it.

i cook for one of my coworkers like twice a week, lol. she is a fayetteville, NC native and she said i am her first real "eye-talian" friend. i made her chicken scallopini and linguine carbonara last week. i made her a vat of vodka sauce one time and i caught her in the break room drinking it thru a straw, lol. she's going to miss me when we move to florida in a few months.

Just when the Cards got my hopes up......this is painful!!! But I have to give it to Holmes of the Steelers...that was a great catch he just made, keeping his toes in bounds. Guess I wouldn't care, but I like Kurt Warner. 15 sec left....fumble...oh, well....was a good game no matter who won.

We had Texas beef brisket on sourdough w/slaw, hot wings, cheese dip, spinach dip, fruit salad and brownie w/strawberry ice cream for dessert. I can't move. Ugh.

The brownie and ice cream were sweetened with Splenda so I could enjoy without guilt....yeah, me!!
