Have you tried making flourless quiches? They are heavenly, even my puppies love them..............Actually make about 4 or 5 at a time and keep them in the refrigerator, gtreat for their meals and with a quick reheat for me.
I don't follow the diet strictly, have found what works for me and have stuck to it. By removing white sugar, white bread, white rice, and white pasta from your diet, you will find that you have so much more energy.

Get some low carb wraps! They are wonderful! I love to wrap everything in them... eggs, blt's, sandwich fixins, taco meat, fahitas. I even make pizzas with them!

I'm there with you Jen. I need to lose weight and really want to start shedding some lbs. before fall nursing classes start. I've thoguht about Atkins too since I've tried everything else under the sun and nothing has worked. What is the Atkons book that you said you bought? I am interested in finding out what you can eat in the Atkins plan? Thanks and good luck to you. I know that I need all the help I can get...lol

Just a word of warning: A lot of people are gonna tell you this is a terrible diet. Get the book. Read it. The first two weeks are the most strict. You cannot stay on the induction forever. If I remember correctly, the book is called "Atkins for Life."

I am currently taking a Nutrition Course and my instructor is constantly putting Atkins down because SHE SAYS it is not a diet you can adhere to the rest of your life. That and she says you need at least 50 to 100 g of carbs for "protein sparing" in your diet. I told her I believe Atkins tells you 70 g carbs - the first 2 weeks. I did ask her once if she read the book. She mumbled her answer. She continues to put Atkins down in lectures. Not wanting to risk a bad grade, I just ignore the barbs.

Once again - READ THE BOOK. It is a great diet - but you must follow the directions. Good luck all!

an Atkins follower for life!

I first went on Atkins about a year ago. Hubby and I lost over 55 lbs. between us. Although we are not toeing the line right now, we still eat with carbs in mind. It really does become a "way of life". Now that summer is here, we eat a lot of veggies and fruits. But white stuff just looks yucky to me. I look at a plate of pasta (if you can believe this) and the meatballs look good and the yummy sauce, but the pasta just doesn't look like something I want. (maybe I now have an eating disorder) Of course, whole wheat pasta isn't bad. but that's down the road when you're upping your carbs a bit.
Talking about people who put the diet down and say things about it that just are not correct... my A&P prof seemed to try to put an Atkins jab in every lecture. We had to write a term paper on, of all things, a popular diet. I wrote one on Atkins (of course) and proceeded to debunk all the myths out there about the diet, how it works, why it works, and how you can stay on it forever, if you so choose. I was a little worried what my grade might be, but I got an A and a "good paper" at the top. I guess he didn't notice that I was talking about him when I spoke of those who make wrong conclusions, had not done their homework.
Oh, our favorite breakfast is a piece of low carb toast (save this until after induction), a piece or two of deli ham or turkey, and 1/2 ounce of chedder, melted over it..yum. Eat slow, It goes away quickly! I almost forgot...Arizona diet green tea..I hate water, but I drink alot of this stuff..and the green tea is supposed to be good for you, Mary

All these different diets are just too complicated

At every meal I cut everything in half

Half I eat

half I throw away

and I exercise religiously again

last 2 months Ive dropped 13 pounds

The old maxim best applies

Keep It Simple Stupid K.I.S.S.
