Hello Everyone,

I was a vegetarian for a year and loved it. I decided to give it a try because I had a problem with a high candida content in my body. When I stopped eating meat my body reacted wonderfully. However, my husband and I moved back home (with parents) and it has been hell trying to stay true to being a vegetarian. My mother cooks and buys groceries a majority of the time so my selection of food is slim to none. I miss being a vegetarian and I am just finding it so hard to stick to.

Just a little history... My husband and I are both in school. He is getting his masters in divinity (to be a army chaplain) and I am going to school for my RN. So, in an effort to save on the high cost of living here in VA we opted to stay with parents... ugh!

I want badly to get back on track because I felt so good and got complements on skin and everything when changing my diet.

Has anyone switched over to a raw diet. i have been researching that and have thought of doing this once I get back on track.

Hi ArmyWife. It must be terribly frustrating to be in that situation. Obviously you have your priorities right now. Perhaps maybe one day a week you can offer to cook a vegetarian meal, like on Saturday night, or something like that. Or buy some veggie burgers to pack lunches.

Vegan raw foodists are a growing movement and the lastest bandwagon. Some vegans feel it takes them to the next level in responsible eating. I think it might be a good way to detox, but personally I could never stick to it.

Their main arguement that cooking destroys important plant enzymes is rather weak to me, because no convincing evidence that we need them. Humans are good at making their own enzymes.

However, it is well documented that cooking leaches out nutrition, so I do tend to eat a lot of raw fruits and veggies (in the form of salads) or lightly steamed to the point they still remain crunchy, or lightly stir fried. I do eat grains and beans fully cooked and don't have the energy to slow cook grains.

Also, some nutrients are released when cooked, notably lycopene, an antioxidant shown to help with certain types of cancer, in particurlarly prostate cancer in men. This is best found in cooked tomato products and raw food vegans have been found to have low levels of this nutrient. They also have been found to have abnormally high levels of vitimin A, which can be toxic.

Anyway, I would continue to do research and decide on a diet that's best for you. Hopefully it will be a vegetarian one.

Note to self: There is no such thing as a good tasting vegan cheese.

I just tried some vegan feta cheese. I must have been hungry when I bought it because I never by vegan cheese, except for a vegan rice cheese slices that I eat only on sandwiches and that's pretty good. Otherwise I just do without cheese. I put this fake feta cheese on my salad and it was dreadful. I hate vegan cheese. I know this so what possessed me to try this I'll never know.

For supper though I made a really good recipe from my cookbook "The Accidental Vegan" which had whole grain pasta tossed with sauteed in olive oil with garlic, sundried tomatoes, artichoke hearts, kalamata olives, and lots of fresh basil. Very tasty.

I'm trying to live up to my New Years resolution to try a new vegan dish every week. Sometimes it's more like a new one every month. LOL

So what's for supper this weekend?

I just had the best laugh of the day reading this! You are SO lucky! The concept of having fresh local veggies in November is comical to a Mainer, but certainly the stuff dreams are made of :-)

We belong to a wonderful CSA as well, and grow quite a bit of our own food, but our growing season is almost over. The folks who own the farm (it's been in the same family for generations) ask for and seriously work with lots of member input on what to grow, so throughout our short season we have lots of Bok Choi (my most favorite food ever), and beets (my second favorite), and all sorts of other great green things. Participating in our CSA has always been a good experience.

I sauteed red peppers and mushrooms in Pam spray and just a teaspoon of dark sesame oil. I added leftover brown rice and called it dinner.

I'm glad to hear that participating in a CSA is worthwhile. I think ours is rather expensive compared to others around the country, $700.00 but they promise 10-15 different fruits and veggies a week from November until May, so we'll see. I think it's a wonderful idea. I love the idea of locally grown organic food. Yeah, I guess a growing season when your ground is frozen solid is a concept that's hard to imagine.

Really wish we had a CSA around here! I live in Central Florida & it's especially hard to grow nice vegetables in our lousy soil. We've found a few local growers from which to get produce, but it's really expensive.

I've started a garden in the back yard. So far, tomatoes & herbs are great, but the others are pretty difficult.

We keep thinking about moving to a more veg-friendly area, but my man's still in nursing school.

Regular produce will have to do for a while.

I have been a vegetarian for 20 years. I am not vegan as I will have an egg and do cook and make salads with some cheese . I like to make stir fry vegetalbes and tofu. I have alot of Thai cook books that do not use meat tofu and veges . Love those thai red and green chilies. Great for the sinuses. What I am trying to stay away from is sugar. I love making home made cookies . I only use the egg whites not the yolks there is some redemption in that.

Just made some wonderful black beans & rice yesterday for lunch. It took all of 15 minutes:

EVOO & chopped onion - saute
Add -
Can of Black Beans
1 tsp Cumin
1 tsp Adobo powder
1 cup Veg. stock (home made from the freezer)

Cook until yummy (about 5 min)

Serve over Jasmine Rice (1 cup in 2 1/2 cups H2O for 15 min)

Sprinkle w/ Cilantro

Yummmmmmmmy!

Anyone else have a quick recipe to share?

Hi paddlelady! Sugar can definitaetly be a problem with me too. I had four cookies at our staff meeting yesterday.

greenergrass, I love black beans and make it similarly but never used Adobo before, and I eat it like the Cubans do with raw onions instead of sauteed. What is "EVOO"????
