We had the "Un-Beef Stew" from VegWeb for supper tonight. Amazgingly satisfying! It was a cold, wet ,windy day here and a hearty stew was perfect. Definitely a keeper with plenty of leftovers for work tomorrow :-)

I just tried to log onto to vegweb and it's been hacked. How dreadful. I hope it comes back soon. Yvette, who runs the site is a sweetheart.

Have you tried soy yogurts? I eat a couple of them a week for the probiodics (I tend towards IBS myself and just got off a flareup a few weeks ago). Don't try the brand O'Soy from Stoneybrook Farms because their grow their cultures in milk. What's the point?

I avoid talking animal ethics to coworkers or anyone for that matter. Sometimes a quiet "I object to how animals are treated in factory farms" is all I'll say. However, I'm not 100% vegan either, so I'm a hippocrite there.

I have tried soy yogurt...it's not too much off from the taste of regular to me.

I am so glad I found this thread it is a great inspiration for me ....Flexitartian is what I am currently I guess but I am working hard to cut all meat and dairy products out of my self and also to some extent my familys diet...I have been going slowly about it ,trying to remove all red meat this far and cutting back on things like poultry and fish. My family being from the small rural area we are in Ky family seems to think we have to have red meat least once a day or I haven't fed them and things like millet are next to impossible to find.
My logic for changing my lifestyle of eating this way follows a few reasons, 1.) I am starting to feel how food affects my body and mood and I am not liking what I am feeling on a typical "diet" of red meat , white meat , processed foods and soda and sugar and very few vegtables 2.)I have started on some medications that have "helped" me gain 20+ lbs. in the last few months even on my regular eating plan of roughly 1500 calories a day 3.) I have decided I just want to be healthier all around and want to care a little less about the scale, I want to judge my health by how fit I am and how I feel as opposed to using the scale...
I seen have some great recipes on this thread ..or at least jumping off points I can use to create my own versions of recipes , as that is how I cook , look at a "recipe" and say how much of that do I have in my fridge/cabinets ? what can I exchange for what I dont have?what else can I add to make it better? My cooking is sort of like experimenting but luckily it usually turns out well enough to eat and enjoy.

any body got any good ideas for sweet potatoes? I have three huge beautiful ones on my counter just waiting to be cooked but I don't know what I want to do with them....

I am too traditional with my sweet potatoes. Cinnamon Sugar and Marshmellow in them. Wrap em in foil, bake and enjoy


One thing I do like though is I chop em in strips and make Sweet Fries by sprinkling cinnamon sugar on them and baking. The I have somethingto dip em in.

Hi kburns. I feel any step we make in the direction of vegetarianism is a good one. Just including 5 or more servings of fruits and veggies in your day can make a world of difference. I'm greatful to live in an urban area where obscure healthy foods like acai berries are available. What we lack is a good farmer's market close to my house.

Sounds good Stanley. I eat sweet potatoes a couple of times a week, but I eat them sliced and raw. Or at the least slightly microwaved. I'm weird that way.

Vegweb did indeed come back up soon. But I was lead to a page that said "hacked" or something like that. Weird. I freaked because I fear I was going to download a virus. But all seems to be well.

At our house, sweet potatoes almost always end up as sweet potato fries. I peel and chop them into chunks and toss them in a plastic bag with a little olive oil, some salt, cinnamon and cumin until they're all evenly coated - this takes very little oil. I put them in a 400 degree oven for about 45 minutes (depending on the size of the pieces) and check/turn them every 15. DH loves them.

So what's cooking tonight? Do you guys plan ahead for the week? Or are you like me, spir of the moment? Sometimes I plan on making one particular recipe and get the ingredients when I do my weekly shopping. My new years resolution was to try a new vegan recipe weekly from one of my dozen vegan cookbooks. I haven't kept it up weekly, but have tried many good things nonetheless.

Last night I made a bulgar and lentil dish that was in my oldie but goodie cookboook "Kripalu". It was just "awright". I undercooked the beans and that didn't help things. I also made a batch of plain hummus, but made too much, so I might have tonight's supper around that. Or maybe mix up some falafel burgers from a mix. Mondays are usually a gym day after work, and it being Monday, I'm pretty tired and lazy when it comes to cooking.
