Re: The Vegetarian Thread

I like Amy's dinners too. I buy them for emergency lunches for those time I'm too lazy to cook. They have several vegan varieties. They can be a bit expensive.

JB, I always have nuts on hand. They are also a very healthy for cardiovascular health.

I made some millet chili last night and it was only o.k. Millet isn't one of my favorite grains, but I like variety.

Re: The Vegetarian Thread

Hi Everyone -

I've been vegan for a few years now for ethical reasons. DH is vegan at home, but will eat meat/cheese if we're out at a restaurant or sometimes at work. For him it's more about cholesterol. I'm a firm believer in activism through cooking, and after eating many yummy meals at our home my mother is very nearly vegan, and one of my daughters is as well. My mother, who is 77 this year, is dazzling all of her friends with her vegan desserts after their bridge games!

I noticed Veganomicon mentioned - isn't it a great book? I got it (autographed!) last fall at the Boston Vegetarian Food Festival. Many, many great recipes, but our favorite so far is the Leek & Bean Cassoulet with Biscuits. Ridiculously good!

Fatfree Vegan is my favorite vegan cooking blog. 3 or more times a week she posts great recipes and ideas. On those days when I'm wondering what I'm going to do about supper, I can count on inspiration from her emails.

Tonight is leftovers, as the fridge is full of a little bit of leftover masaman curry, eggplant-not-parmesan and the last of yesterday's homemade pizza, plus I have microbiology tonight and won't have time for make a "real" meal.

What's for supper at your house?

My mom, is a huge fan of millet... she's allergic to wheat, but loves her millet. When she would make millet for us, she would cook it like rice. While it was still hot, we would mould the millet with our bare hands into little dumplings just a bit larger than the size of a golf ball then squish them into more of a flying saucer shape. I think she was inspired by the Japanese legend about Momotaro (about a boy who appears inside a giant peach to a childless couple) in which he ate Kibi Dango, Millet dumplings.

These dumplings are good too with some grated cheese mixed in.

Now I'm inspired...I haven't made millet in years!

I don't like millet. Trader joes has some great tasting vegan jambalaya and lentil curry in a pouch. Low fat and spicy! Heat 90 seconds in the pouch and eat!
They have a millet pilaf my daughter loves. Reminds me of bird seed.

These claim to contain two servings but I eat it all.

Amys is good but some meals are high fat.
The only fat that doesn't raise my cholesterol is nuts and peanuts.
Even olive or rape seed oil so I don't fry except with a spray.

But yesterday I was with a group of friends for the day. At lunch I ordered a vegan sandwich. I think the "roasted" vegetables has lots of oil. It was GOOD!

Re: The Vegetarian Thread

Have made for the first time joghurt and even hubby enjoyed it. Was nice that all ingrediants was natural ie milk and fruit with no additives so he could enjoy it knowing without a doubt it was veggie.

I might go out later so now before a nap, I'm going to have some vegan chicken nuggets with barbeque sauce as a snack. Health is Wealth makes a variety that is labled vegan.

Have you tried the Vegan Parm. cheese made my Galaxy? I bought some but haven't used it yet. I normally don't like vegan cheese. I only like a Rice cheese that comes in slices that totally vegan. The rest I've tried are horrible tasting.

There you go talking foreign again. But I Google "joghurt" to discover it's yogurt. It is any different that American style?
