I like to serve it over the newer low-carb wheat pastas.

QOD:

When you feel like quitting (whatever tough quest you are on, like being healthier), what keeps you going? Any special thoughts/meditations/motivations you use to keep yourself on-course?

Selfish motivations....I need to hear this today, from whoever has some ideas. I am in a rough patch. Thanks!

For women: I think that we are always putting ourselves last. We are natural nurturers and I bet that being a mother and a nurse is even more so.

Anyhow, I believe that being "selfish" for a day is wonderful. If she is married/together with someone she should plan that special day and either have the kids babysat by a sitter or the spouse. Maybe save a few bucks and go get pampered at a spa or atleast the nearest salon.

Go out to the mall with a friend or even alone, and "splurge" on any one outfit or item you've been wanting. Take the day off from the kitchen, chores and the children.

I am sure the person becomes rejuvenated and comes back to "work" renewed in some sense.

I am not a mother or nurse, but DO take a few of these "days-off" a year. I get tired/bored of chores, cooking and thankfully my husband is very supportive of me.

For a guy, the same thing can be done omitting the a few things. Maybe hanging out (even at home) with a few buddies, eating and having time alone with them.

Be creative and selfish.

Thanks for the recipe Deb, sounds delish. I do not like the low carb pastas at all. But I do go whole grain.

Since I don't cook much anymore...kids grown and all....the healthiest dishes I put together for myself on a regular basis are as follows:

Fruit Shake: WHEN I used to drink Soy Milk, I mixed Soy Milk (you can use other milks though) with bananas, strawberries, a tsp of honey, put it all in the blender and blended it together....great tastin' shake! I also used blueberries, pineapples, and orange slices at times. Do your own thing...whatever your taste may be.

Salads: A mix of green salads with either chicken, tuna, salmon, or chopped breast turkey meat mixed in. Add fresh mushrooms, peas, sliced tomatoes, bacon bits or freshly fried bacon pieces, chopped boiled egg, two tablespoons of ranch dressing, or bleu cheese dressing, or miracle whip and you have a luscious salad. I eat them for dinner or lunch at times.

Macaroni and Salmon Salad: (great for fixin' in the summer months...quick, easy, little cooking required): Cook elbow macaroni or bowtie macaroni until done. Let cool. Drain one large can of Salmon. Leave the bones in the salmon for more calcium. Mix macaroni, salmon, can of drained peas, chopped boiled eggs, chopped celery, chopped green bell pepper, a dash of grounded pepper, and enough miracle whip (or mayonnaise) to moisten the ingredients; stir all ingredients together, then sprinkle top of mixed food with paprika for taste. Chill, and enjoy. Goes great with fruit of your choice as a side dish. Enjoy!

Those are three of my favorite dishes to munch on. I'll post more later.

Deb.........I am sooooooo ready to make your Clam Chowder Soup! As soon as I get all the ingredients, I'm going to make it. I like Oyster Crackers with my Clam Chowder Soup.

Take a block to extra firm tofu and cut it into slices. Wrap in paper towels, and then wrap in a dish towel. Put wrapped tofu on a plate and stack a bunch of plates on top of this. This will squeeze out the water. Then slice and dice red peppers, onions, garlic, broccolli, carrots, whatever and get a nice teriyaki sauce or other stir fry sauce. By now the tofu is drained and can absorb the sauces. I use peanut oil or canola oil. I made some yesterday. Don't forget to add the hot chilis.

Just wanted to give a "Tofu Lesson". Woot!
Hey Tweety! Seattle Sutton is a person actually. She's a nurse making a fortune mass producing balanced diets. 1200 or 2000 calorie, all the meals are prepared so its real convenient and we like the food. It's just food though no meetings or weigh ins or contracts.

Being Italian we have marinara (gravy) every Sunday. It's a simple recipie, we don't put a lot of stuff in it as is the American way. I've it changed slightly to make it a little healthier. No one knows the difference.

1 large can crushed tomatoes
1 small can tomato paste
Italian seasoning and fresh basil to taste
A dash of splenda
A tablespoon of parm/romano powdered cheese (used to use half a gallon )

Add up to one can of water for desired thickness.

Turkey Meatballs
1 pound of ground turkey
1 egg white
2 slices of bread crumbled or 1/2 C bread crumbs
Garlic cloves or powder to taste
1 tablespoon of parm/romano powdered cheese

Spray pan with olive oil cooking spray then add rolled meatballs.
Cover until outsides of meatballs are cooked then uncover and brown.
Spray the meatballs with cooking spray if they don't want to brown.
Bring sauce to boil.
Add meatballs to sauce and simmer 1-2 hours.
