I don't pack anything too thrilling - especially on those days where I'm packing lunch and dinner. My staple is yogurt mixed with the Kashi Nutty Nuggets and a banana or fresh berries. I find it to be extraordinarily filling so that tends to be my "main course" most nights for dinner.
I also found these wonderful Thomas' whole grain bagels that are easy to pack (front pocket of the bookbag for the win!). I'm a big grazer as opposed to a rigid meal eater so I tend to pack lots of small things (cheese, the no sugar added applesauces, fresh fruit/veggies, nuts, dry cereal, whole grain cereal bars, granola bars, pretzels - I'm a Kashi addict).
Pretty much the items mentioned above and salads and veggies and fruits. Unfortunately, during the school year I find myself eating a lot of the same foods.

Also, I will go 3-4 days eating salads then once the greens run out I have to wait until I have time to hit the store again to get more. I can't wait until time is not such an issue - right now I "bulk" grocery shop every 2 weeks.
I'm not eating 100% great right now (I've also had to cut back on organic to save $$, I try to prioritize with dairy first - milk/milk products & eggs). I don't have the time to run to 2 grocery stores - the health food oriented one that is 40 minutes away and the local superstore 10 minutes away. Going to Whole Foods is a treat right now! Though, I must admit, the mainstream store is getting more and more stock of organics and "healthy" items.
I'm contemplating trying some of those Kashi shakes - I'm nervous that once clinicals start in the fall and "real nursing school" that I'll have even less time and be too tempted to eat the junk on the floor! I figure a drinkable meal, though not great, might be good in a pinch.
