Happy Monday! I hope everyone has started off the week well. I just got back from grocery shopping and have a kitchen full of good stuff. My problem isn't that I don't eat well, I just eat A LOT! So, I'm making a simple veggie soup that I can eat lots of without guilt, I have some some soy yogurts (it's a single serving - even I can't mess that up!) and lots of unsweetened applesauce which for some reason makes me really happy lately.
Breakfast is a challenge, so I wanted to ask what everybody else is doing. I'm vegan, so no eggs, milk, butter, meat, etc. I love oatmeal, but it's calorically dense, so I don't want to eat it everyday. I'm not a big fan of cold cereal. Pancakes would be great, but that's probably one of the things that got me into this mess in the first place!
I've gotten goals from 3 people so far. If anyone else wants me to add you to the list so we can post our totals each week, just send a PM. So far everyone has a goal of pounds to lose, most have a goal of minutes to exercise each week, one has a number of strength training workouts goal and one has a goal BMI.

Maine do you eat the veggie sausage or Boca veggie patties? I know I see it in the grocery store. Maybe you can get some whole wheat tortillas and make a breakfast burrito with some fat free cheese. Maybe have some salsa or saute veggies in it.

We try to avoid processed foods as much as possible, so I've never looked at those veggie burgers - BUT you have given me a great idea. We often have homemade veggie burgers I can make a bunch of and have them available for a quick breakfast. I'll have to put those on the menu for sometime this week!
I'm going to give smoothies a try as well. I always think of them as not being substantial enough to last me through the morning, but who knows......

Hi everyone! I hope you are all having a great week.
I have been doing pretty well with my eating and may go for a walk when dh gets home from work.
I am dvr'ing biggest loser and Idol, because I have a test on Resp. & Digest. systems tomorrow morning. I haven't really studied much. We have 4 weeks left after tomorrow. I am so looking forward to summer break. I really need to get my house in order; the mess is driving me crazy.
So I got to get going.
Keep up the good work everyone!!

Hey! My digestive and respiratory test is this week, too! You're better than I am - I'm taking a break to watch Biggest Loser :-) I'll do flashcards during the commercials. I promise!

Thats funny my respiratory and digestive system test is in the morning too. we had our lab test today and i so made an A on it...it was really easy i thought. but anyways these first two days have been good...i am doing mini wheats for breakfast with slim milk lots of fiber is always a good thing....lunch was subway... not to bad when your on the run...but i would definitely like to eat lighter and healthier at supper time...my husband is a meat and potatoes kind of guy so its hard and a variety for breakfast would be good theres not that many things that are healthy for bf except for fruit but ive added lots of H2O this week....i should lose alot of water weight...yay im excited for the first 5 or 10 lbs.

Good Luck to all of you guys with tests this week. Good Karma coming your way. Good luck to all of us on our fitness goals.
Maine although you don't like cold cereal have you considered maybe doing grape nuts with soy milk and heating it up in the microwave. It's not to shabby. Have you ever considered Grits? I lived in the south for a few years and they another option. Don't forget there is nothing wrong with lunch and dinner for breakfast, so if there is something you love for lunch give it a try for breakfast.
For those that aren't vegans I made Ziti tonight with ground turkey.....it was really good. Opted for fat free cheese as well and Ronzoni Pasta which has three times the dietary fiber. Fiber is very important.
I am there with you guys tonight....I will be watching the Biggest Loser. The show is so inspiring! Have a great night all!
