Anyone with quick healthy recipes?

Hi. Anyone interested in posting quick healthy recipes? I have two that I use.

Pizza wheels(that's what I am calling them)
1 Multigrain Thomas English Muffin(these are AWESOME! They have 100 calories and 8 GRAMS of FIBER!!)
1 Tablespoon of spaghetti sauce
Sprinkle skim mozzarella cheese on top
Add some veggies if you want
I microwave them for a minute, but if you wanted them crispy, you could probably put them in the oven for 5 minutes or so.
I calculate this to be under 300 calories. After one of these, I am full. Great for lunch.

Eggbeater Omelette(I haven't used this in a while)
1/4 cup of Eggbeater...any flavor
1 cup Bird's Eye Farm Fresh Frozen Veggies(Mushrooms, Onion, Broccoli, and Red Peppers all in one happy mixture!)
1/4 cup skim cheddar cheese.
Microwave for 2 minutes(I think) in a microwave safe bowl.
I forget how many calories I figured this to be since I have not done it in a while, but I know I was making it a lot when I was doing Weight Watchers. I think it was under 300 as well.

I would love to hear more quick, easy, and healthy recipes. Thank you.

Devin Alexander has a show called Healthy Decadence on Discovery Channel every thursday night at 10 or 1030. She also has a book called The Biggest Loser (yup the tv show) cookbook. Great recipes, you can also order a Cooking Light cookbook on amazon or ebay. There are great recipes in there too.

hmm i sugest to go to the recipe books or log on to kitchenomics.com so that you can choose many kinds of recipes.. they are easy to cook..

This isn't a recipe, but it is a quick and easy food when you're in a hurry! The only downside is they are probably high in sodium, being a pre-prepared food and having ham in it.

Lean Pockets Whole Grain Ham & Cheese.
210 calories, 7 grams of fat, and 5 grams of fiber.

Here's one my mom (whose in WW) told me this weekend for a desert:

box cake mix (any brand, any flavor)
1 can diet soda (any brand, any diet flavor)
1 box sugar free jello (any brand, any flavor)
1 bowl of fat free cool whip

Mix the soda with the cake mix (ignore the recipe on the box), bake as usual. Mix the jello according to box instructions. When cake cools, and jello cools (not completly), poke holes in cake and pour jello over top. Top with bowl of cool whip.

This is soooo yummy, and you can afford to have a nice serving with out any guilt. b

I haven't done calorie counts on my attempts at cooking.

If you don't mind a frying pan, pierogies are nice:
Put olive oil in pan. Add diced garlic. Turn on Medium.
Put frozen pierogies and whatever frozen veggies you like, in pan.
Put onions in there too (bad breath... sedated patients... it works)
Add salt, basil and a tablespoon or two of italian dressing
Cook 20 minutes or so, add a little water if you're about to burn the pierogies before your veggies cook.
It's greasy but oh, so good.

Couscous is good with chicken broth, veggies, onions and almond slivers. I load mine up with italian dressing when it's done... Newman's Own olive oil and vinegar has become my favorite sauce lately!

Pizza toast... similar to the english muffin thing, on wheat bread. It's yummy but I don't usually bring the fixins to work - it's more of an eat at home thing. My teenager likes it and she hates most of what I cook.

Bill Phillips (of EAS fame at the turn of the century) published an excellent cookbook that has numerous recipes that are quick and easy. The recipes are fairly "clean" but you can make them even better by using higher-quality ingredients.

If you like tofu...Saute bell peppers,any color or combinations will do, with onion & garlic in olive oil, until tender-crisp, add cubed tofu, cracked pepper and salt to taste. Add your favorite pasta & toss. I also sometimes add fresh tomatoes & parsley with the peppers & onions. Even my kids love this!!

My favorite side dish and leftover work lunch is...

rice (I make two cups (raw) so we can have leftovers
frozen chopped spinach-thaw in the microwave
salt, pepper and then sprinkle with feta cheese before eating.

It's quick, filling and pretty healthy!
