Diabetic Diets

Hello,
I am a lpn/lvn nursing student. I am in my last 2 months of nursing school and must admit can't wait until it's over.

My problem is I am working on a diabetic diet plan. It is a 1600 ada for a 65 year old hispanic f/m. I am restricted to a cost of $25.00 for the food for 3 days meal planning. my food pyramid is as follows:
milk/yogurt/cheese group 3 serv. Meat /poultry /eggs/beans/nuts 2 ser
vege 2-3 serv. Fruit 1-2
Bread/pasta/cereal/rice 6 sevings or less.

I can not get this all to balance out.
Any suggestions or websites that i should check out would greatly be appreciated.
