I understand when one consumes carbohyrates whether it be simple or complex---it turns into glucose. Does the body differentiate between simple and complex carbs??

Simple converts quicker so things like sugar have a quick effect on blood sugar.complex carbs take longer to convert, like potatoes, pasta etc.but they all have the effect of raising blood sugar.

Fiber content will make a small difference - makes digestion a little slower. But in the end all glucose becomes pyruvic acid which becomes ATP. Look up Kreb cycle.
