Here's my $.02 as a current UCHSC (accel) student.
It's not a problem taking the labs several days after the lecture. My schedule was a bit different than yours (I took health assessment in the summer and fundamentals in the fall) but it's feasible either way. The things I considered (or wish I would have) are as follows:
1. Commute time. My commute is an hour and a half by bus, so I prefer to get everything done on one day to avoid multiple trips.
2. Pharm/patho study time. I didn't take the two during the same semester, but I believe you have Dr. Sampson for patho and he gives a test every week; I always tried to reserve the night before that class for studying, if possible. I don't know what days you have him, but it is a LONG day to go to a lecture in the morning, then the six hour lab, and then try to study again in the evenings. I was pretty much braindead after having a lecture and lab on the same day, not to mention fairly tired.
I'm not saying it's not possible to do all that in one day, just that for me, it was pretty tiring, so I tried to schedule my labs to avoid patho/pharm study times. There is kind of a happy medium, I guess. In any event, fundamentals and assessment are only 6 week classes so you'll be okay, in the end.

It just depends on your own personal priorities.
